Most bread knives are stamped, serrated by machine, and forgotten in a drawer. This one started differently.

The Serrano began as a skill-builder — a deliberate decision to learn one of the most technically demanding processes in knife making. Hand-ground serrations on a 2x72 belt grinder with a small wheel attachment. No factory process, no shortcuts, no template. Every single serration cut individually by hand, shaped, and finished with the same attention given to every blade that leaves this shop. It took considerably longer than a standard grind. It was the point.

The result is a bread knife that actually performs. Clean entry into a crust without tearing, controlled draw through a loaf, and enough precision to handle delicate pastry work without crushing it. Seven inches of AEB-L stainless steel — BCB's house steel, heat treated to 60 HRC — in a profile designed to work as hard as the cook using it.

Then there's the handle.

This is BWP ShokWood — not ShokRes. ShokWood is Beyond Wood Products' most complex material, incorporating actual wood burl into the resin construction at the bolster and heel. The result is something no purely synthetic handle can replicate — the warmth and figure of natural wood anchored in the stability of resin. This specific pour is Midnight Forest — deep green resin, black tones, and natural burl that photographs like something alive in it.

BWP closed their doors permanently. ShokWood no longer exists in production anywhere in the world. What remains is what makers like me managed to source before the lights went out. This colorway is a one-off custom pour. When this knife sells the Midnight Forest is gone from the world entirely.

BCB makes fewer than half a dozen bread knives a year. This is one of them.

Every serration, every grind angle, every edge bevel was done by hand in my 80 sq ft shop in Provo, Utah. No production line. No shortcuts. One knife at a time.
