The Wasatch — 7" Santoku Chef's Knife in AEB-L | Dizzy Peacock
The cook who owns this knife doesn't blend in. Neither does their kitchen.
Some knives whisper. This one walks into the room.
The Wasatch — Dizzy Peacock is a 7" Santoku built on the same profile as every Wasatch that leaves this shop — Western-influenced, full tang construction, built for the push-cut and draw-cut techniques that serious cooks actually live in. Seven inches of nimble and capable. The kind of knife that disappears into your hand after ten minutes of prep and doesn't let go.
The blade is AEB-L stainless steel — a fine-grained, highly refined cutlery steel with a well-earned reputation in professional kitchens. It takes an exceptionally clean, sharp edge, holds it through real work, and when it needs attention it comes back fast. No fussing, no babying, no special storage requirements. Just a knife that performs.
Then there's the handle.
BWP Dizzy Peacock ShokRes — electric yellow and deep blue with a pattern that earns its name every single time. These scales came from Beyond Wood Products before they closed their doors permanently. This material doesn't exist in production anymore. Anywhere. The yellow G10 liners push the color story all the way to the edge and the ¼" mosaic pins finish it with just enough detail to reward a closer look.
This handle was made for someone specific. A cook with a personality that fills a kitchen. Someone who spent years using whatever knife was handed to them and finally decided their tools should reflect who they actually are. The person who picks this up and immediately knows it was made for them.
