The Wasatch is a 7" Santoku chef's knife ground in CPM MagnaCut — one of the most technically advanced blade steels available to a custom maker today. MagnaCut wasn't borrowed from another industry. It was engineered specifically for cutlery: edge retention that outlasts most stainless steels, corrosion resistance that beats most carbon steels, and a toughness that holds up to daily kitchen work without complaint. When it finally needs sharpening, it comes back fast and true.

The profile is a Western-influenced chef's knife with thicker spine for daily demanding tasks than a traditional thin sushi spine profile — built for the push-cut and draw-cut techniques that serious cooks actually live in. Seven inches puts it in the sweet spot between nimble and capable. Long enough for most proteins and produce. Short enough to move quickly when precision matters.

The handle scales are BWP Ti Dreams ShokRes — a material I sourced before Beyond Wood Products closed its doors permanently. These scales no longer exist in production. When my supply is gone, they're gone forever. The thin black G10 liners and ¼" solid carbon fiber pins add just the right measure of class and refinement to what is already a bold and irreplaceable material. Truly a stunning combination of bold character and quiet refinement.

Every dimension, every grind angle, every edge bevel was done by hand in my 80 sq ft shop in Provo, Utah — in the shadow of the same mountains this knife is named for. No production line. No shortcuts. One knife at a time.
